Aftermarket Seat/Modification

My mom just got a 2010 Kymco Super 8 150.  She's only like 5' tall and from where the seat is concaved to allow for the under seat compartment, she can't touch the ground safely.
Is there an aftermarket seat that can be bought or any recommendations from you guys on how to solve this for my mom.  She needs to be at least 2-3" closer to the ground.  Any help would be GREATLY appreciated.  Thank youin advance.

Trim the seat....but seriously doubt  3" can be removed and still have seat. Buy thicker soled boots.
Maybe a combination of the two?
Buy a scooter that fits mom?

 check out three wheelers or side wheels for a scooter,  or slide off the seat when she stops,.

Without ever having seen the seat, I'm assuming it's some vinyl like material stretched over the foam core and stapled along the bottom. My suggestion would be to pull enough staples to be able to pull the covering back and use an electric bread knife to carve the foam down. When you get it to a comfortable level, pull it tight and re-staple.
