can I drain my injection oil reservior and add oil to my gas on my peoples 50?

You can; but I ask questions.

Does the oil also lubricate engine bearings besides just the piston ring area?

Will removing the reservoir and premixing prevent other crucial engine parts from being lubricated ?

Those would be my concerns.

You can premix, but why? The oil injection on Kymco motors is really good. You'll go though 10x as much 2t oil, and have to get messy every fillup.

I think riders are concerned the oil pump will fail  and cause engine seizure. And removing the pup and premixing removes one thing they have to worry about.

Oil pumps rarely fail as they are well lubricated.

If he's planning on modding he may need to premix.  I never premixed on my old 2t.  The guys at my shop have told me it's fine.  My mechanic told me if I started doing heavy mods to my 2t (Genuine Buddy 50) that I should switch to premixing.

It really depends, with the Kymco autolube pump you can adjust the amount of oil injected by tightening the 12mm lock-nuts. The existing oil injection is more than enough for a street 70cc build. You only need to go premix if you plan on building a motor that will see more than 12,000rpm on a regular basis. I premixed my Zuma a while back and won't again, I drove it a lot and was going though about 3 bottles of 2t a month. It took about a quart to mix 5gal and I could go though that in a week or a week and a half, gets expensive fast. While injection goes to 100:1 at idle and saves a lot of the good stuff.
